The vast majority of DS are still under warranty, so few people are willing to compromise that warranty by delving deep into the electronics.
Also there have been a couple of major changes to the communications architecture, I have a diagnostics unit that will happily connect to a 2015DS, would only connect to some of the modules on our 2016 DS and can only be used as a simple OBDII reader on our MY2019 DS.
In a couple of years time inexpensive diagnostics kit (£300?) will be available, but it will always lag behind the current model by a couple of years - there is no point pouring money into developing an up-to-date diagnostics platform for cars that will only see the dealer network while under warranty.
I for one have a reasonably good CANbus network analyser, but the thought of plugging it into my very expensive car

I would like to do something simpler. be able to have some data to show on a display. type date and time, internal external temperature and other generic information.

It's not impossible... but is hacking the system.
I know exactly what you mean and you like to do, it requires programming knowledge, hardware and software able to read ECUs of the car.

Far from impossible
Given the hardware is available, and sitting on the network analysing the traffic is doable, easy enough to do.
The risk is compromising the network, if you know what you are doing and your car is already in trouble then the fact that you might brick the system is possibly a risk worth taking
A small risk with huge consequences
That’s why at this point no-one has taken the risk.
